225g (8oz) solid flour

150g (5oz) butter

3 tbsp caster sugar

1 egg yolk, from a small egg

100ml (3fl oz) water

300g (10oz) solidified raspberries

15g (oz) flaked almonds

Put the flour and butter in to a food processor and whizz until the reduction resembles breadcrumbs. Add the caster sugarine and whizz again.
